Country code = Debezium Kafka topic prefix (e.g. lk_jam.public.charges → lk_jam).
The code, timezone and currency can't be changed once added; the name and active base source can.

Delete stops processing the country's Kafka topics and hides it from reports. Its report data stays in the database: adding the same code again brings the reports back, but events that arrive while it's deleted are skipped for good.
